23 City Blocks Hospitality Group is excited to announce Chefs Patrick Russell and Tyler Davis will be leading the culinary teams of The Chocolate Pig, a new concept restaurant opening late fall in St. Louis’ Cortex District inside Venture Café’s Innovation Hall. The Chocolate Pig will offer a variety of casual dining experiences, showcasing moderately priced dishes based on the namesake. The culinary mission includes using nose-to-tail cooking methods, sustainability and fine chocolate elements threaded throughout each menu level. Like all branches of 23 City Blocks Hospitality Group, Chefs Russell and Davis embrace the philosophy of serving simply prepared dishes crafted to evoke full flavors through the use of the highest quality seasonal ingredients, creative composition and sound cooking technique.

Chef Russell brings more than 18 years’ experience to his role of Executive Chef, relocating to St. Louis after serving as Sous Chef at Field & Main, an upscale eatery in Virginia. He graduated from The New England Culinary Institute in 2010, but in 2009, he started as an intern for Tom Colicchio at Craft Restaurant in Dallas where he climbed the culinary ladder to the title Sous Chef. In 2013 while serving as Executive Chef at MAX’s Wine Dive, his house-made chips topped with caviar and crème fraiche were recognized by Bon Appetit as number one most outrageous “nachos”. Chef Russell was also named “Second Hottest Chef in Dallas” by Eater Dallas in 2013. While less to do with his culinary prowess and more to do with a fun fact, Chef Russell’s friendliness in the kitchen certainly transitions into the relationships he builds with his customers.

“I’m honored to step into this new role as The Chocolate Pig’s Executive Chef and excited to share my culinary style with guests either visiting or living in the St. Louis region,” said Russell. “I’m also grateful to Corporate Executive Chef Nicholas Miller for his guidance and support adding to the list of accomplished chefs I admire.”

Chef Davis of St. Louis, Missouri has most recently worked as Executive Pastry Chef at Element bringing his own creative flair to the St. Louis pastry scene. Davis gained national attention when he appeared on the Food Network’s third season of Halloween Baking Championship, which certainly has played a role in his St. Louis fandom. Chef Davis was nominated for Feast Magazine’s Top Pastry Chef of the Year (winners announced August 2018) and has facilitated pop-up dinners at Brennan’s in the Central West End plus many other lauded accomplishments and media coverage.

“I’m very honored and excited to be given this opportunity to create new and innovative desserts in what will be a beautiful dessert show kitchen at The Chocolate Pig,” stated Davis. “Interacting with the fortunate guests who garner a seat at the open-concept confection kitchen is the perfect fusion of my love of creating and collaborating. Working with Chef Russell and crafting seasonal menus together will be one of the highlights of my culinary career.”
